Les vignes
In Burgundy, the mandatory vine plant is pinot, especially adapted to clay and chalky soils.

The vine grows best in pebbly soils,
which allows the rain to drain, and
keeps the warmth in.

Characteristics :

  • yield of 40 hectolitres per hectare
  • Culture on trellising
  • GUYOT trimming : fruiting cane with 6 buds from where the fruit-bearing branches grow, and one spur with two buds for the following year's cane.

Vinification

We practise traditional vinification, allowing the wines to ferment about 3 weeks, in order to obtain wines with lasting tannins.

The vine is destalked, but we add about
10% of stalks to add acidity.

Vinification
  • Fermentation at around 30 ° Celsius (86° Fahrenheit)
    With thermoregulation.
  • Pneumatique INOX press with electronic programs
  • Aging in oak barrels
  • Fining of the wines with egg whites
  • Frequent controls of the malolactic fermentations.
  • Natural and non-pasteurized wines intended for aging.

Too much alcohol is dangerous for your health, drink moderately.
